This banana coconut bread is the best ever! And the best part is that it is healthy. Yummy healthy something.


You need high level self control to eat just one piece.

Double or triple the measurements if you want more.


1 teaspoon baking soda


1 cup of mashed bananas(about 5 bananas


1/2 cup low-fat milk (i use 3 crowns or dano slim)


1/4 cup oil (I use sésame or gnut oil)


1/4 cup honey


1 large egg


1 teaspoon pure vanilla extract

3/4 cup of acha flour (or any other flour you like)


1/2 cup of oat flour


1/4 cup of all purpose flour


1 teaspoon ground cinnamon


2 teaspoon baking powder


1/4 teaspoon salt


1/2 cup of grated coconuts


Preheat oven to 180 degrees C and place the rack in the center of the oven. Spray a 20 x 10 cm loaf pan with a nonstick vegetable cooking spray or grease with oil.Instructions:


In a large bowl, mix the banana puree with the baking soda and milk. Allow to sit while you prepare the rest of the batter.


Meanwhile, in a separate bowl, whisk together the oil, honey, egg, and vanilla.


In another large bowl, whisk together the flours, baking powder, ground cinnamon and salt.


Then combine the puree with the oil mixture and then add to the flour mixture. And in 1/2 of the coconut.

Stir just until all the ingredients are moistened. Don’t over mix.


Pour into the greased pan and smooth the top.


Sprinkle top with remaining coconut



Bake for about at 180 °C (or gas level 6) for 45-55 minutes or until a toothpick inserted in the center of the loaf comes out clean.


Remove from oven and allow to cool then bring out from pan.

Makes about 12 slices
