Low Fat Mango Acha Bread

This bread was so moist , super yummy and very filling too.  And hey, mangoes are in season. And they are cheap too ???

Ingredients

1 teaspoon baking soda

1 cup of blended mango into puree (about 2 large mangoes blend without the outer back and the skin)

1/2 cup low-fat milk (i use 3 crowns or dano slim)

1/4 cup cholesterol free vegetable oil

1/4 cup honey

1 large egg

1 teaspoon pure vanilla extract
3/4 cup of acha flour

1/2 cup of oat flour

1/4 cup of all purpose flour

1 teaspoon ground cinnamon

2 teaspoon baking powder

1/4 teaspoon salt

1 tbs of dried fruits (rasins)
Preheat oven to 180 degrees C and place the rack in the center of the oven. Spray a 20 x 10 cm loaf pan with a nonstick vegetable cooking spray or grease with oil.Instructions:

In a large bowl, mix the mango puree with the baking soda and milk. Allow to sit while you prepare the rest of the batter.

Meanwhile, in a separate bowl, whisk together the oil, honey, egg, and vanilla.

In another large bowl, whisk together the flours, baking powder, ground cinnamon and salt.

Then combine the mango puree with the oil mixture and then add to the flour mixture.
Stir just until all the ingredients are moistened. Don’t over mix.

Pour into the greased pan and smooth the top.

Sprinkle top with dried fruits (raisins).

 

Bake for about 45 – 55 minutes, or until a toothpick inserted in the center of the loaf comes out clean.

Remove from oven and allow to cool then bring out from pan.
